Reproduce Knack project in Laravel for subscription model

OBJECTIVE I have built a system using no code tool Knack.com to manage bookings for my event business. I am now looking to move this over to a Laravel build to manage my business - and allow similar businesses to use the same sort of system to manage their bookings, charging them to do so via a subscription model. I want to make sure that this can be developed as rapidly as possible using Laravel tools. HOSTING I would like this set up to be hosted via a Digital Ocean droplet. I already have a DO account. LARAVEL STACK I am open to suggestions but believe Laravel Spark for its subscriptions functionality with team billing and ability to add plans and bill via Stripe, with a per-seat billing options will work well, combined with Jetstream and Tailwind for the front end. Again, happy to discuss the best route. Having different permissions is essential too, so the team model and user management would fit. KEY FUNCTIONALITY OVERVIEW BOOKINGS - Where all bookings are managed, including customer details, address, dates and notes. Then break it down with products, with users able to add their own inputs and options for each product to save against the booking. Also wanting to make sure that there is an availability checker for products on dates. TEAM - Where staffing is managed. Linked in with users functionality of Laravel. Users can be assigned against a booking, can record their hours, update details and volunteer for available shifts. BILLING - To manage all the billing for customers and where we are with invoices.
