Magento 1.9 Hard Back Up, Export and Tidy Up

I have a ecommerce website running on Magento 1.9 that I am transferring to a colleague. I need to keep a full back up of the website and be able to export a copy of the website to my colleague who will then be running the site. Before this I need the general back end of the webiste tidied up and old back ups deleted, test runs and lgins etc.

Somebody with a good understnding of Magento who can do this with ease would be ideal.
