Shopify App or Plugin

I own a coffee roasting business and we roast to order. I offer different coffee beans as separate products since they are unique items. I can only roast so much every week and need an app that can limit the amount of total sales for a given week.

For example, say I can only sell 60 bags of coffee each week. If I'm offering 4 different coffees, I need something to limit my overall sales to 60 rather than limit just an individual item. I’d like to be able to limit the inventory of each item based on what I have I in stock, but show everything as “sold out” when my total number of sales reach 60 for the week. Can you create an app that will do this?
