Description

Hi Conrad,
Developer or not, if you've come up with Squarespace as a solution for your needs, then you've not done your research. Yes, it's 'possible' with Squarespace, but it's certainly not the best option. You've already encountered an issue with the way Squarespace, before even reaching the more technical side of things (eCommerce/courses etc.)
WordPress creates responsive images/image sizes out of the box and already implements the recommended way of doing this - https://developer.mozilla.org/en-US/docs/Learn/HTML/Multimedia_and_embedding/Responsive_images
Based on your requirements, I would personally say that WordPress would be the best fit for something like this. You don't need to be a developer to be able to use WordPress...
Are you open to having your website built using WordPress/WooCommerce instead?
If you're not a developer I wouldn't recommend trying to tackle any eCommerce/online course website yourself.

Interms of platform, have you decided it must be squarepace, there is woocommerce. No limitation.
There is prestashop and opencart etc.
