Problem with Ninja forms, messages are not delivering correctly

I have a problem with Ninja contact forms on a WordPress website. They have been fine for several years but now when emails sent through the form, the copy email sent to the sender is correct, but the copy sent to the business has most of the data missing - see the attached image.
Everything is up to date, WordPress version, theme and plugins.
I've tried disabling all plugins then activating just Ninja forms and the problem still occurs.
I want someone familiar with forms to try to sort this out for me.
