Modifying order date for CSV export of WooCommerce orders

I have developed a WooCommerce-based store, the orders for which are being fulfilled by a third party who require a CSV export per order which they can automatically capture and provide to their warehouse.
They have requested the CSV format to be customer id, SKU, quantity and due date.
I am almost there using WooCommerce Customer/Order/Coupon Export plugin. It is set up to send the CSV file automatically via email upon each order using customer_id, item_sku, item_quantity and order_date.
The issue is that the plugin pulls the order_date (exact date and time the order is placed), but the client requires the ‘due date’, which is determined by when the order can be delivered by them.
The date I require order_date to show in the automatically generated CSV per order is:
The next working day day if order placed before 12:00pm Monday-Friday
Two working days later if order placed after 12:00pm Monday-Friday or at any time Saturday and Sunday
Working days here would be Monday To Friday.
Is there a way to make some sort of addition to functions.php which would set the order_date as per the above?
If this isn’t possible, would there be any other way to achieve the goal of the CSV file’s date reflecting the due date/date of delivery, as per the cut off days/times?
