Small Business Server 2008 Help Needed

Hi there,
I have just installed Windows Small Business Server 2008 onto a standalone machine.
I run a small IT Training company and would like my training laptops (up to 50 of them) to be able to connect to Exchange for their emails. They won\'t always need to connect though - only when there is an Outlook course running.
I will be imaging my laptops. I have one main laptop that has four partitions. They all have Windows XP installed, but each partition is different. The first partition has Office 2003 installed on it (and some other things), and is used for training. The second partition is Office 2007 and is also used for training. The third partition is Office 2003 but is only used for the MS Office certification exams as I need a clean install with no virus software. The forth partition is Office 2007 for exams.
I am going to buy Acronis SnapDeploy so that I can deploy this image to any laptops necessary via the network. I want to be able to image my laptops so that we don\'t have to specify the Exchange server and user account when launching Outlook. I\'d also like the laptops to have their own personal networked drive (linked to the server), and a single shared folder that they all can access.
I\'ve bought Avast anti virus for the server.
But my main interest in someone from here is that they can help me set up my Small Business server to allow the laptops to log in for their exchange email and user settings (default web page, username, etc).
I\'m also interested in having Sharepoint services as some of the training courses look at publishing documents to a sharepoint server. Another course looks at using InfoPath and Sharepoint to do surveys.
I need someone who knows about these technologies to give me advice and to help with setting this up properly. I am a small business so cost is a factor at this point.
If it is important that the machine is set up with a static IP address then I have to wait till my line is put into our new office (we\'re moving in 2-3 weeks) and I also have to wait until our broadband is set up.
