100,000 Word Book

I have written a financial book with 15 chapters and 100,000 words long. I need it to be tidied up, proof-read, edited and the fluff taken out of it. I was thinking about getting a proof-reader to give it the once over but I think it requires more work than that, the chapters may need restructuring, sections taken out etc. in order for it to flow better. I dont need a ghost writer but I need more than a proof-reader if that makes sense. Somebody who can come in and fill the gaps, add paragraphs where necessary, cut away and basically bring the book to life. It's a financial book but you dont need to be a financial person to understand it - it is called "13 Insider Trading Secrets that will blow your mind" and is an expose of some of the dirty tricks that happens in the financial world. so the style is conversational from my perspective trying to help people, especially the elderly vulnerable not to get caught by boiler room scams. In terms of price i have suggested £600 but I dont know what is a fair price because you need to see the work required, I am open to discuss and will gauge feedback from people on PPH.
(I also have another project where I would like to take 50 blogs that I have written and convert them into a book. Again its; not a ghost writer that I need but somebody to be able to piece the blogs together and add interconnecting paragraphs to help the story flow.).
