The logic of a Booking plugin to be edited in WordPress so that it suits my business

Description of requirements/features: Hi guys,
I am building a site for a WordPress site for a client and it does the following:
– Its a fishing site where people can book a spot on a fishing lake
– The user selects one of 10 spots to fish on that lake (these fishing spots are actually listed as staff members in the back-end of the plugin I use but its just terminology. They work the same way.)
– The user selects the date they want to fish and time
- The user then completes the booking and transaction

It probably best to familiarise yourself with the above before looking at the problem I need solving...

Okay, so like most booking plugins on WordPress, its built in a certain way and the options only let you do so much..
Now then, here’s my problem.
I need each fishing spot to only be booked once for each day. But as there are 10 spots that means each fishing spot can be booked ONCE on any 1 day but never twice. That means each day 10 fishing spots can be booked but they are all individual fishing spots (1-10). The next day that booked spot should be available to book again etc.
The plugin doesn't seem to work this way or allow this.
The plugin has both global availability and capacity rules as well as individual staff availability and capacity rules too. Although Im not sure whether I can set them to work how I want them to work. If you can make it work just using the plugin then great. I think the template of the plugin may need to be tweaked though.
Ideally, the person that helps with this has experience with WordPress and booking plugins out there (WooCommerce especially). A lot of booking plugins for WordPress are similar so if you've used one then you will pick this up easily.
I'd also like someone that knows there way around and will backup their own edits so that the site won't break or the template wont crash.
I don't mind giving out login details if you would like to look around the wordpress backend and plugin and scope the problem.
*Its also extremely important that you know how to edit WordPress plugin template files in a way that they won't break if they are updated. Otherwise the whole exercise of changing some of the plugin rules is pointless.
If you have any other questions just ask. I appreciate this is quite a unique problem.
The client is pestering for this to be fixed ASAP so help would be great. Willing to negotiate on price depending on complexity.
