Troubleshoot slow Metronic Datatables form

Description of requirements/features: My form is connected to a MS Access database through ODBC - everything there works fine.
Using the Datatables sample page (http://www.keenthemes.com/preview/metronic/theme/templates/admin2/table_advanced.html) I wrote some PHP to echo HTML markup for table rows and data. This works fine for 100 items, but the database I need to query has 200,000+ records that I need to search. When I try to echo 200k records to the page, it crashes every browser on every computer I've tried it on. I understand that there is some server-side work that could be done, but I do not understand how to maintain my form functionality to add an item to my order.
It is important that I keep the functionality to enter Quantity, Project, and Item Notes.
It is also important that I have a simple 'search as you type' interface to make this very fast. It is to be used on iPhone/Android, tablets, and desktop/laptop computers.
I am open to not using Datatables, but I really like how fast it can search all tables at once and only show relevant results.
