Fix Ubuntu/Wordpress server configuration so that PHP files display correctly

I have an Ubuntu server setup on an Amazon Web Services EC2 instance - a Wordpress site was functioning relatively well before I changed the site URL, after which I could no longer access the site and was redirected to the default Wordpress setup page.
Subsequently, I compounded the problem by changing the domain records and installing or updating nginx and LetsEncrypt via SSH - I just have no idea what I'm doing though honestly and after a bunch of edits of .conf files that I don't really understand later, I have got the site to the point that PHP files DOWNLOAD rather than actually displaying.
The applicant will need to be well versed in administering Ubuntu servers, and bear in mind that I am not.
I will provide the site URL, as well as credentials for SSH access. I expect this should be a quick task for someone who actually knows what they're doing - note that the actual publicly accessible data in var/www should not be touched - there is an existing site which I want to regain access to.
Finally, when PHP files are displaying correctly, I need to regain access to the Wordpress site that is already set up. The issue here was that I changed the site URL in the admin panel, I could potentially fix this myself however once the other issue is resolved but ideally this would be fixed also by the successful applicant.
