WooCommerce Custom Script / Divi Wordpress

I have a woocommerce site that is used solely for internal employees to obtain different items for customers. The issue I have is that while I have bypassed the billing requirements so they can checkout without having to pay for anything or fill out the billing fields on the checkout page, the SHIPPING fields are prefilled with their employee home address but can be overwritten (typed over) to any address where they want the items shipped. There is also a SPECIAL INSTRUCTIONS field that appears on the checkout page that can be filled out.

My issue is that for some reason, even though the shipping address and name fields can be typed over and special instructions filled in, they are ignored when processing the order and the default name and address appear on the email receipt and no special instructions are included in the receipt.

PROJECT:

Fix the issue of the shipping name and address not appearing in the email receipt
Fix the issue of the special instructions not appearing on the email receipt
Make sure the employee gets an email receipt of the transaction as well as the default email coming to the company email address
Make sure the database records the right details for shipping name and address and the special instructions
Review CHILD THEME functions.php script to see if there is anything creating this issue but do NOT modify that script without first advising what needs to be updated and why
