Simple Excel script / macro (Mac/PC Excel 2016)

General information for the business: we play with data
Description of requirements/functionality: Need the following:
I have a folder with multiple Excel workbooks (2016), each workbook is formatted the same (as a form, not tabulated and only one worksheet)
I need to collect data crem certain cells in the excel spreadsheets and place this data (from all files in the folder which meet a wild card filename) into a single file et. Tabulated format.

Specifics - files are added all the time, so either script needs to append new data or wipe clean and add all the data again
Specific technologies required: Should work on office 2016 on PC and Mac platforms
OS requirements: Windows, Mac OS
