Change 'Book Now' status on booking website, dependant on date

I have a Joomla website (Joomla! 3.9.8) , using a bespoke component that allows people to book courses. The courses can be seen here (https://www.wedotraining.com/courses).

Currently they become unavailable ('unpublished') the day of the start date.

I would like a quote for two options:

1) Change the 'unpublish' date to 1 day earlier than currently occurs.
2) Change the 'Book Now' button to 'Call Now' 1 day before the course becomes unavailable. Allow the course to 'unpublish' as it currently does. (Call now would link to the phone number).

Some may have misunderstood my job. The two options are each separate solutions. I need EITHER option 1 or option 2, so was hoping for a price for each.
