Project and task management set up- What to use??? How to?

There are so many tools out there. Teams, Monday.com, Asana... I need someone who can help me determine the best tools to use for "my project and task management needs." I have projects with multiple teams working on different issues and hundreds of simultaneous tasks (many discussions go with each issue/task). Project does not work for this... I am looking for a tool where I can see what is going on in each area all the time. Teams bury work in channels, and I don't care for that. I keep trying project management tools and go back to excel worksheets in google drive. I tweak them to work for me. With that said, I know some integrations work with Monday.com, and I am thinking about continuing to use excel with the addition of monday.com integrations.

I need someone to look at what I do and help me decide what tool(s) would be best, and help me get a system/workflow set up.
