Need help setting up git plus a local mirror of Magento site

I need help:
a) getting a site hosted on Nexcess mirrored and stood either on my local machine (Mac OS X Monterrey, Intel chip) or Docker (your choice)
b) getting git set up so I can make code changes and add extensions/themes
c) ideally, also utilize docker-magento if we decide to go the docker route
I don't have to use my Mac for a local install if you prefer to spin up a vm of some flavor of linux. I can do that too.
I have an account on Kamatera (cloud docker host) but it is very bare bones and we'd probably need to install a bunch of software to make it a viable option.
Please make sure you have experience with setting up an environment like I'm describing.

Site is not live.
This is eventually going to be a migration from Adobe Commerce to Open Source
We really just need the open source target environment set up with the same extensions as the live site
We'll move customers, orders and products over.
