Joomla professional needed

I need someone who is fully confident with Joomla to complete a Joomla based project.
I've tried listing the job before, but I'm no further forward.
I have a directory style website (built in joomla) that allows hotels to create an online listing that can then be searched geographically.
It was built in Joomla 1.25, but is being updated to 2.5 as we speak.
What I want is essentially EXACTLY the same website, that does EXACTLY the same thing, but with children's entertainers instead of hotels.
In my head (as someone who doesn't actually build sites) I think that that should be a super-simple job (after all, the overall functionality of the site is already coded)
I would have thought that it was relatively simple to duplicate the whole site, change the header banner, then change the copy text where necessary, and tweak the existing coding to point to a new database (focusing towards entertainers rather than hotels)
I don't know if I've been dealing with idiots, or people who are only interested in rebuilding me a new site using a different platform, but it seems like an impossible task to get the job done.
I'm really looking for someone to sort things out and then use on an ongoing basis.
At the very least, I wish someone could explain why this all seems to be so complicated.
I can't believe that it's easier to rebuild EVERYTHING, when the original site might need a 15% change to make it exactly what I'm after. (Surely 15% change is easier than 100% build)
I DO want a couple of add ons ( a couple of extra pages and a forum), but first and foremost,I'm just after the foundation of the basic site.

The site WAS compromised with malware, but has been fully cleaned, and is being reinstalled as the more stable 2.5 by another pph genius.
I'm sure that there must be someone out there who can produce what I need. Please ignore my estimate of £300 and just let me know YOUR price (there's plenty more work, more development, and more websites)
