Double Opt-in Contact Form 7

We need to add double opt-in to our Wordpress theme which currently uses Contact Form 7. A user would simply add their email address to a form on the website, click a box to confirm terms and hit subscribe and then the system would send the user an email with a link to click before subscription is complete.

I just want it setup, tested and working so I can demo to a client.
