Mobile Web App with MVC3 + jQuery Mobile

We are a creating a mobile web application for use predominantly on 7" tablets. The project will be MVC3 with jQuery Mobile. The database structure has already been defined and Balsamiq mockups will be provided for all the screens. This is for Phase I of a multi-phase project, so good, extensible code will result in repeat requests for work.

The application is a combination of scheduling and an ordering system. The goal is to get Phase I complete by the end of April before beginning Phase II. There are roughly 20 screens in total.
I've attached a non-exhaustive overview of the first phase (the part this quote pertains to) of the project. The goal is to complete the first phase as quickly as reasonable, put it into production, then we plan to begin work on phase two after the first rounds of feedback come in.

I have mockups currently complete for roughly a third of the screens, as well as a majority of the database defined. We would like to have development start by February 20th.

Some other questions I'd like to have answered are:
- What do you foresee as the schedule for discovery, developmenting, then testing?
- Do you have any concerns about the development framework? (MVC3 + jQuery Mobile)
- Do you have any production deployment suggestions? (hosting, etc)
- What is your familiarity working with merchant accounts and credit card processing?
- What is your updated time estimate with the additional information in the attached document?
- What questions / concerns do you have for me about the project?
