I need help formatting some logos

Hi There,

I'm doing a packaging job and I need help with some logos. See attached Green logo - this is a PDF. Can you please turn it into an editable form as I need it to drop into different colours. I also need to understand the process as I'm sure it's simple but I just can't get it to work. I don't understand why some logo types are editable in my file and some aren't. Also my printer has said that the illustration artwork needs to be embeded rather than linked. Couyld you please look at my file and let me know what I'm doing wrong? Might need to do a zoom or a bit of back and forth.
