Transfer designs to Illustrator

I have copies of label designs and don't want the design changing, but they are in the wrong format for the printer company and I don't know how to amend and think I have bothered the previous guy enough already :)

The message from the printer company "The file you sent over seems to be a flat image saved in the eps format. Do you have the original layered file for each label saved individually. We require editable files in CMYK to size and colour correct the artwork to match our printers"

The files I have are saved in .EPS but the "sample" image attached to this post is PDF as it would not let me upload EPS.
