New PDF's needed of various forms

Information for the business: We are a finance company
Design details: We are a new small finance company specialising in commercial finance. I have a number of items, mostly pdf files that i need to be retyped and designed and that must also be editable. Since i have these from other companies they are actually locked so cannot be copied. I need these files put into pdf's that i can 'fill in the boxes' i have the files and i have the branding and fonts. In total there are approximately 19 documents and 6 word documents that have the documents with masses of text typed out to be copied and pasted.
Given a disaster last time i need to be super clear here - These documents show the wording and the layout i need, i need them retyped exactly the same with my logo, branding and fonts etc, there will be an element of design too with the branding but again all of the picture files are there they just need to be arranged on a page. What i do not need (so please don’t send examples of work with this) is for someone to open up the files and then create boxes on the existing document, this i can do with my Mac!
If someone can unlock the existing documents then great it’ll make the job quicker as the text could be copied and pasted from it, although i suspect it'll just be quicker to type them.
Document names are below and correspond to the same name on the attachments:
1) Quotation Summary with facility pages included (Page 1-5 on attachment)
2) Data Protection (Page 7 on attachment)
3) Application Form - can we have the option to select number of applicants and number of security addresses and then it makes the form bigger if needed? Also need boxes asking if applicants will be paying 'Interest payable in advance by Direct Debit or Retained Interest or Rolled up Interest) - (WestOne Application Form as attached & Word document available with just the text)
4) Employers confirmation (To follow could only attach 3 items to job)
5) Accountants Reference - (To follow could only attach 3 items to job)
6) Income and Affordability - can we make this 6 sources of income and able to add up everything automatically? (To follow could only attach 3 items to job)
7) Mortgage Reference - (Page 25 on attachment)
8) Occupiers consent - (Page 26 on attachment)
9) Occupiers consent witness certificate - (Page 23 on attachment)
10) Solicitors certificate - (Page 27 on attachment)
11) Submission checklist (both parts) - (Page 29-30 on attachment)
12) Surveyors report (3 pages) can we add option on last page to upload photos? - (To follow could only attach 3 items to job)
13) Legal Charge (Branded) (To follow could only attach 3 items to job but word document also done)
14) Management Agreement (branded) (To follow could only attach 3 items to job but word document also done)
15) Loan agreement (branded) (To follow could only attach 3 items to job)
16) Confirmation of Ground Rent (Page 18 on attachment)
