I need help organising a couple of years of family photos and building a photobook(s)

hello-- I have 5 years’ worth of family photos of our 2 children who are now aged 6&7. I'm worried they are going to live on the icloud forever so I would like to get some help sorting through these and organising them into some books.
I will need help:
- downloading the pictures easily from several mobile devices so they are accessible
-- choosing photos that are the right quality and type to include
-- design a photobook for me
-- help choose paper and covering and help on the printing decisions.

The plan is to have these as a Christmas present for my husband.
