Convert an Address/Contacts database sorted by Category from Access to Excel

We are a small medical research charity (Restore Burn and Wound Research) based near Aylesbury Bucks with our addresses/contacts sorted by category (Trustees, Vice Patrons, Supporters, Donors etc). The database is on MS Access which none of us know how to use properly. We want to convert this database into Excel whiel retaining the current Catgories/Sorting. We had thought about converting it into Outlook but are worried that this might pollute our personal Outlook Contacts databases and anyway we run/share documents on Dropbox
