PDF to Excel Data Entry

I need some assistance with entering the data on the atatched PDF documents. In total there arto take 169 pages take data from. All of the pages are laid out the same, but the information is different in them.

I need two diffferent spreadsheets making, one with all of the data. And then i need it broken down by the employees name please.

Once the data is complete i wold like this to be visible in graphs please.

The final product must be in excel. I have attached an example sheet fro you to look at. As mentioned they are all the same as this with different data in.
