Data entry - Customer delivery information

I have a frozen food distibution business in Australia and require someone to do some ongoing daily (or every second day) data entry work, taking information from scanned (PDF) customer delivery dockets and delivery run summary sheets and then inputing it into our daily reconcilation Excel spreadsheet.
We also have PDF images of cash collection bank bags that totals each of our delivery drivers cash payments from customers each day, and the total's of each of these bags would need to be entered into the same spreadsheet to reconcile that days customer collections.
I'd also require a summary of any notes that our delivery drivers left of the delivery dockets, for other staff then to follow up.

This would be just the start of some admin tasks that we'd need completed, though as this is the first time I would be using a virtual admin assistant, i'd like to start with this.
