Data Entry - Convert Itemise handwritted invocies on to excel

I require the information on from handwritten invoices to be retrieved and entered into an Excel table.
Each invoice will take roughly two to three minutes. I have minium 80 invoices per month from March 2022 to March 2023. I will distribute the work amoungst 3 people, so each will get 3 or 4 months. This is to reduce the turn around time.
The format of these handwritten invoices is either JPEG or PDF.

You must use the newest version of Microsoft 365 and proficient in using tables. Accuracy it utmost important.
