Help Setting Up Amazon selling in .FR and .ES

I've been selling on Amazon for years, and recently had a little try with PAN EU. It worked well and I got good sales, but when I looked into the tax implications I had a shock!
I have decided to register for tax in France and Spain only and try and grow my sales there.
It turns out that this is a lot harder than I thought and is taking too might time from my actually selling in the UK! I run my business on my own so my time is limited.
This is what I've found out so far.
PAN-EU is so much better for fees...my fees for selling in France have now rocketed (Spain isn't going yet as I've not got my tax number).
I don't understand the France fees they are charging me as they don't tally with anything on the .FR fees tables I've downloaded. I've sent some help emails to Amazon today...which has taken me all morning, but I'm not hopeful for a useful response. Not understanding the fees I'm being charged at the moment isn't too bad as I will be changing it by shipping to them directly I suspect, but it's a little worrying that I don't seem to understand their fees.
I am not sure the best way to move forward with selling in France and Spain. I guess it's shipping myself to their fulfilment centres, but I am not sure. I know there are other programmes such as EFN, but I am not sure if I can use it or if it is better for me. I need help working that out for some example products of mine.
I don't understand all the amazon settings - I still seem to be selling in Italy and I can't turn the settings off. I don't want to sell in Italy, store any products there, or in Germany/CZ or Poland. I have no faith now that I am not still running up a tax liability in those countries. I need to be sure I have the optimum Amazon settings on, and off for me and my needs.
I don't understand the best way to make my listings in France and Spain. Build international listings made some of the listings a while ago, and I've run it again, but it misses lots of listings, especially in France. I don't know the best time-effective way to make those listings in France. Is it best to make all new products so they are not shipped from the UK with high fees or some other way. I am having my listings translated professionally, but lots of them don't have listings.
So, basically, I have no idea what to do! I need someone with experience of Amazon FBA and selling in those marketplaces that can help me. I need help making a plan for selling in those two countries, decifering fees, planning the best way to sell, working out if all products as worth selling, how to ship them, and then possibly execute it with me. How much you can help me depends on the amount you know and can do for me, so an hourly price will be best. I may also discover more precisely what I need help with and find more things as I go on.

This past year has been really tough for my little business with soaring costs meaning I've spent all my retained profits, so I've got to keep this project cost to a minimum. I am trying to sort out my costs this year and expand to France, but at the moment it is actually costing me to sell there so I need to get it sorted asap! I welcome offers all types and newbies to PPH.
