General information for the business: We rent out chairs at a beauty salon

Description of legal work: We run a small beauty salon, renting out chairs to nail technicians on a self employed basis. One of the new girls signed a contract, turned up for the first day and then decided she no longer wanted to commit due to a change in her circumstances - contract states a 3 month notice period, however, she has not shown up, or made weekly payments. As detailed in the contract.
We're at the early stages of this, so need some guidance in terms of how we deal with it - communication has stopped, no payment has been received for the first week. I've had a letter sent to request the first weeks 'rent', but nothing has been received and no reason given, this is now the second week and not sure whether we should keep sending weekly reminders (with the account balance increasing) or if there is another procedure we should be going through.
Looking for someone familiar with this situation to help with making sure we notify etc in the correct manner, and ultimately, help with any future dispute and collection.
