    twelve years experience of writing and editing and contribute to several
    publications in the UK, Eire and USA, e.g. Good Food, Waitrose Food
    Illustrated, The Times, Food and Wine, Kitchen Garden, Chef magazine and
    Gastronomica (USA) and others. I also edit chefs' recipes and cookbooks and
    create recipes for the Stockfood Agency. I also wrote the section on wartime
    food for the official souvenir booklet issued by the Ministry of Defence for
    the 2005 VE Day anniversary celebrations.

    My special interest is the history of food and regional cooking and recipes
    of Europe and the USA. I have written several cookbooks, including 'Gypsy
    Feast: Recipes and Traditions of the Romany People' (Hippocrene New York
    August 2004); 'Porters English Cookery Bible, Ancient & Modern' (Robson,
    London, September 2004) with Richard, Earl of Bradford; 'contributing author
    to 'The Foodlovers' Guide to the Northwest' (Bluecoat press 2004) and '1001
    Foods You must try before you Die' (Cassell, 2008; Scottish Heritage Food
    and Cooking' (with Christopher Trotter) published by Lorenz, November 2005;
    Seasonal Celebrations (Robson, London, December 2007); Marinades and Rubs
    (Parragon May 2007) Just Ten Minutes (Parragon, May 2007), Self Sufficiency
    Preserving (New Holland, May 2009) and 'The Whole Hog (Pavilion, September
    2010) . Most recently I have written two sections (history of wedding cakes
    in Europe and USA and Cheesecakes) of 'The Oxford Companion to Sweets'
    (OUP) which is due to be published in May next year. My latest cookbook 'The
    Bacon Cookbook: More Than Just Breakfast - 50 Irresistible Recipes for
    All-day Eating' was published in October 2014 by Lorenz.

    I have promoted British food and cooking on Yorkshire TV and Swiss/German and Dutch
    television and am a judge for the International Chocolate Awards in London
    (2013) and Florence (2014) and again in February in London this year.
