I need written summaries created from videos (8 in total) done over the weekend and ready for me by Monday morning 9am.

I don't need you to style it like I have, just a plain word doc is fine with the headings, a very short summary and actionable tasks and importantly the timestamps.
They are on average 12 minutes long.
