I need an article conversion from simple text to tabular form

I will provide an article of ~30 pages, for which I need a conversion to tabular form (very important!).
The table (which is more a representation format of the article) needs to contain the exact words and phrases from the article, which means you will not need to modify the information because I am interested in the language used.
There are several flowcharts which can be left out, but I want the information on the already existing tables included.
What interests me most is how to extract the information contained in there so I can select the most important parts needed for my research.
