Wordpress Theme Set up

Hi I have a wordpress site and I have installed a wordpress theme on it. I need some help with customising the category pages, the menus, and colours. This is the theme: http://themeforest.net/item/gonzo-clean-responsive-wp-magazine/2415788

I would like you to set it up as the demo site is, and populate with general content for now http://www.olliemccarthy.com/themes/gonzo/

I need several different categories set up with colour and layout set up.

Shouldnt take someone with a decent amount of experience any more than a few hours at the most.
