Setup Wekan+4Minutz+cal.com via Docker

I have an VPS Ubuntu 20.04 server running Plesk. I want to add the open source applications Wekan, 4Minutz and Cal.com to the server (each on their own subdomain and each in their own Docker container). Will require the setup of a Mongo DB Docker also. Can use free Let's Encrypt certificates for the subdomains (already setup) via Plesk.
Docker images are already loaded onto Plesk server.
