List a woocommerce variable product variable options in a list

I have a woocommerce site that offers courses.

Courses are currently pages that show the [add_to_cart] shortcode so people can buy the courses.

Now I have dates so the products are changing to variable products. The [add_to_cart] shortcode doesn't work with variable list. Can you create your own shortcode or a bit of code that I can drop in and it shows the list of variable options based on what product IP I put in?
