USB MIDI Arduino Drum Prototype

I am looking to develop an Arduino code for a USB MIDI Electronic Drumset.

This electronic drum device will be utilizing Piezo Electric Transducers.

There are 3 things i need with my prototype:

1. 11 Piezo Drum Analog inputs that send Velocity Sensitive MIDI signals via USB port using the midi notes of my choice. (Please advise me on what components are necessary for this. Usually i use 1megaohm resistors and sometimes 5.1 Zener Diodes for piezo sensors)

2. Corresponding LED Lights: I would like for the LED lights to correspond with each Piezo Element.

3. We need to adjust the sensitivity of each piezo sensor
