Ubuntu server setup support

I would like to purchase 8 hours of support. Primarily this will be used setting up a ubuntu server. If there is time to spare I would like to keep some time \"in the bank\". I will supply access to an instance via ssh and we should be able to share a console( http://ubuntuforums.org/showthread.php?t=299286 ). We will also have a skype (or similar) session. I will need to be driving so that I make sure I understand what is being done so that I can reproduce it.

I would like to set up:

MAIL

I would also like to add:
spam filtering,
enable secure POP access,
groups

OTHER

Other services that I need to set up are:
Secure FTP
BIND (I need to be able to run a name server)

MAYBE (depending on time and energy)
