Extract information in Excel using Text Analytics

Looking for someone with experience of doing raw text extraction with multiple variants. A suggested method is to use MS Azure to do Extract information in Excel using Text Analytics and Power Automate see https://docs.microsoft.com/en-us/azure/cognitive-services/text-analytics/tutorials/extract-excel-information

This is a suggested method you may have a better one, but be aware that the raw text is unstructured.

I have a similar project to do which takes emails exported to excel with variable text based responses and need to extract relevant data and present it in a excel format. See attached sample file showing raw text and desired output.
