Change text within h1 tag

Description of requirements/features: I have an ecommerce store that displays product titles in the following format:

Brand name – Product name – Colour

The hyphens - are part of the product title. They all follow this format and are wrapped in a h1 tag which has classes of product_title and entry-title.

I need to locate this h1 tag on the page and alter the format of the product title to the following:

Brand name Product name Colour

Removing the hyphens and wrapping the brand name and colour in a span tag.

So the code needs to find the first hyphen, as the text before this will be the brand. It also needs to locate the last hyphen as the text after this will be the colour. There might be more than two hyphens which is why it needs to find the last hyphen and not just the second one.
