Basic remote Ubuntu Linux Server Apache config to be done ASAP

I am after some basic Ubuntu Server configuration done remotely, I have done this myself once before but it was a while ago and i am a bit too busy to relearn it all again for a one off project.
The server is already set up with the latest Ubuntu Server and webmin and i can set up ssh access. What we need to do is:
1) set up the domain so we can access it and it can serve files locally at: XXXX.local
2) split the system up to be more efficient across the two raids (1 is a two disk mirror with the system installed, the other is a 6 disk raid 5) i would be guided on the best way to do this but I'm guessing the Apache server should be on the other raid to Ubuntu?
3) set up the network cards (4 of) to be more efficient, again i would be guided but i think two should be teamed and plugged into the local network and another one should go straight to my router so that our crm can send it's emails without going through the switch or taking up any of it's network resource??
4) set up a simple daily backup
This is all pretty basic for someone who knows how to handle Linux.
I can do any hardware adjustments here that may need to be done and can follow direction from you. and can also be available weekends if necessary.
Fixed price is negotiable but within reason.
