Infusionsoft/Keap conversion data through pipeline

We are a bespoke tailors and only sell suits in our bricks and mortar stores. We have sales pipeline stages that we move our clients through on Keap (formally Infusionsoft). They go from inquiry to booking from booking they can go into 'thinking about it', no show, sale. We need to extract conversion data to track our success.
Our working method is to tag all inquiries from a particular month and then to see what stage in the pipeline they are in 8 weeks later. We are meeting some complexities that we would like some assistance with to develop a reliable method of extracting this data.
