Shopify Website Tweaks & Changes

General information for the website: I sell custom wedding stationery online and need a few tweaks to my product pages to improve the usability for customers

Description of requirements/features: I use the product customiser app to add extra options to some of my product pages as the number of variants Shopify offer is capped at 3. One of the ways I use the variants is for the quantity as this affects the price. I need the standard quantity box removing on some of my products because of this as I think it confuses my customers. I would also like the width of the option descriptions increasing so the layout is cleaner and to add an "ask a question" button (exactly the same as add to cart but maybe in a different colour) next to the "add to cart" button. I'm awful at explaining so please see the attached example.
I wondered how best to create this as some of my products (namely the cards, prints and some wedding décor items) would still need the standard quantity box.
