Customise woocommerce category page

Kind of development: Customization of existing website
Description of requirements/features: I am currently developing a wordpress/woocommerce site for a gallery and want to customise the category/sub category page so that instead of having just an image, title and number of products within that category (see attached image) the listings include:

image (from category image)
title (category title)
first 15 words or so from category description (NB am using CategoryTinymce to allow a different image to show on an individual categories page (in this instance the an artist) so wouldn't want that to show.)

If it helps to clarify:

Parent category = artists (in case I need to use another parent of exhibitions etc). This is the page I'm interested in a the moment so I can display all the artists with a brief bit of their biog. you would then click though to see that artists (sub categories) page with all relevant products.
Sub category = an individual artists
Products in that sub category are an artists paintings.
Extra notes: There will possibly be further templates to customise later in the project.
