Unix Scripting - batch process

I need a freelancer to write a unix script that will strip out some unwanted data from a collection of text files.

We have a huge amount of individual contacts (.eml) that was imported from a CRM database. Unfortunately all the notes data came with it into each contact. We need to strip out that information. We don't have access to the old database to re-import the data.

The job entails writing a script that will batch process the files and remove the unwanted data

Test files can't be uploaded to PPH due to them being publicly available
