Sharepoint setup for medical device startup

I’m working for a very small medical device startup (2 employees). I have recently set up our Microsoft 365 business platform and have been struggling with sharepoint and power suromateyfor the last couple of days to set up a strong document review and approval
Workflow for our quality management system.
