I need some changes made to an existing membership Access Database

I have a customised Access Club Membership DB written in MSA2007. It has a backend and front end both .accdb
The Club's members activities are all recorded in the DB, including the running of two horseracing competitions every year - one Flat and one National Hunt (NH).
In the "life span" of a member over say two years; they apply to join and go on a waiting list until such time as they are elected.
Having been elected at the Annual Dinner in March (all attendee and payment details recorded), they submit a list of twelve horses. This list is recorded under each individual members name. These horse names are based on a dropdown list (which I upload at the beginning of the season) which contains the accurate spelling and breeding of some 15,000 horses names taken from Raceform's Horses in Training. Horses not on this list can be added if wished at the time of entry.
Once the competition is under way and no more entries are forthcoming; the DB firstly generates a unique list of all the horses showing how which members have them in their list. It also generates another PDF formatted report which shows a box with with each members selections (stables) A4 folded to A5 with four members to each A5 section. this then goes into a printed booklet together with the horses index showing which members have gone with which horse. (Thus Dobbin (USA) 4, 18, 23, 17..... the numbers being assigned automatically to each name o an alphanumerical order basis).
Gender is important as there is one comp for Ladies and one for Gents on the Flat.
The NH is run for both sexes.
The principal income streams and payments received from each member and recorded are: Subscriptions, Club Book Bet Stakes; Payments for losing members side bets; Dinners; Ladies Lunches; Sweepstake Tickets; Donations and Others. Currently, at the beginning of each year the sub levels are set and when clicking the appropriate button, it generates a subscription due to each members account.
The DB also has an Events page where details of each event are entered and members attending; orders for tickets; apologies received and so on. Anything that requires payment is added to each members account and is cleared when cheques received are entered under the members name on the transactions page.
It generates a variety of reports, but does not allow me to change many of the details especially within the (in my view) overly complicated book-keeping system.
It is quite difficult to explain unless you have a copy in front of you.
What I need is to have the whole thing tweaked so that when I make the usual cock-ups associated with age and late nights, I can undo them without having to go through a whole taradiddle of cleaning up.
The DB can also currently send out letter to members based on their outstanding bills - but I have no idea how to change that element.
