WooCommerce Bookings Calendar View Customisation

I am using the WooCommerce Booking Add-on to manage room bookings. I would like someone to build a custom extension to this to allow me to use a category selection on the calendar and booking view page.

So fo example, I will have 2 or 3 bookable products grouped by category. On the following two page:
1. wp-admin/edit.php?post_type=wc_booking
2. wp-admin/edit.php?post_type=wc_booking&page=booking_calendar

I would like a new drop-down added that allows me to select a product category. Selecting that category would then filter the bookings to all products that have that category applied.
