Load Woondershop Theme onto existing Site & Clean up old plugins

I have an existing commerce site with a very old and clunky theme, with loads of old plugins that are made redundant by many modern themes.
I need a test (staging) site creating with a copy of our existing site, woondershop loading and customised to our colours (and a few other tweaks). The a clear assessment of which plugins can be removed (again - I have an idea which ones). Ideally, once everything is ready & done I'd like the speed optimisations done too (css etc, not a cache plugin!).

Tweaks will need to be made to both the desktop and mobile sites, however my understanding is that most of this is done through the theme customisations anyway.

Of course, once we are happy with everything on the test site it all needs applying to the live site... :-)
