I need someone help with Facebook Catalogue Segmenting - using custom tags

We have a woocommerce site, and want to create segments for certain kinds of products in our Facebook catalogue, but don't know how to do this.

For example, i would like to assign - 'Ryanair approved' to a selection of my range, where i could then target people interested in Ryanair.

I only need the help on the feed and segmenting, not the actual advertising side.

We also have about 1/3 items not pulling through to Facebook Shop from Woocommerce, would like this to be fixed!
