Sharepoint Guru Required

We need a SHAREPOINT Server expert. We have an old Sharepoint Server 2003, we need that server to be removed from old data centre. We need server backed up and also need to know if there is any way to get all files and data off from there and convert into flat files, if not suggest what is the best way to extract data from there and back it up and give users access to it. Please contact us ASAP. If you can come on site it is preferred.
